Carrot Cupcakes


These cupcakes are divine! They are by far my favorite cupcakes - as well as my favorite go to recipe when I need to bring cakes to an event. The recipe never lets you down and they are a sure hit with everyone :) I hope you give them a try - I promise you won't regret it!



Here's the recipe

100 g muscovado sugar
175 ml oil
2 eggs
225 g flour
3/4 teaspoon bicarbonate of soda
1 teaspoon cinnamon
pinch of salt
grated zest of half a lemon
grated zest of half an orange (you can leave this out if you want)
3 medium sized carrots, finely grated

Icing

200 g cream cheese
350 g icing sugar
grated zest of half a lemon
vanilla seeds from 1/3 of a vanilla pod

Mix oil and sugar and add the eggs one at a time. In a separate bowl mix flour, salt, bicarbonate, cinnamon and grated zest of half a lemon and orange. Pour the dry ingredients into the wet and mix it well. Lastly, add the grated carrots. Pour into cup cake cases and bake for approximately 15 min. at 200 degrees celcius - or until a tooth pick comes out clean.


For the icing, beat cream cheese, icing sugar, lemon zest and vanilla seeds at high speed until the icing is completely smooth. Put on cup cakes when they have cooled completely.
